Lamb Chops and Tabouli
Serves 4

8 lamb chops
2 garlic cloves
2 tsp each of fresh mint, rosemary, basil, oregano
1 tsp English mustard
3 tbsp olive oil

For the tabouli
1 bunch parsley, finely chopped
2 medium onions, finely chopped
3 medium tomatoes, finely chopped
100g burghul, soaked in warm water
2 tsp fresh mint, finely chopped
½ cup lemon juice
? cup olive oil
garlic chips
8 garlic cloves, sliced
? cup olive oil

l For the lamb chops, place all ingredients except chops in a blender and whiz until smooth. Spread mixture over the lamb chops and cook in preheated oven to 300°C for 8-10 minutes.
l Meanwhile, to make the tabouli mix all ingredients in a large bowl. Chill until needed.
l For the garlic chips, heat oil in a frying pan. Fry garlic slices until golden. Serve lamb chops with tabouli and decorate with garlic chips.
