Baked Okra in tomato sauce
Serves 4

2 cups okra
¼ cup vinegar
2 medium sized tomatoes, cut in 8 pieces
1 cup onion, finely chopped
½ cup parsley, finely chopped
½ cup green pepper, finely chopped
2 cloves of garlic
4-5 tblsp olive oil
Salt and pepper

l Soak okra in vinegar for 5 minutes. Drain liquid, discard and pat dry vegetables

l Brush an ovenproof dish with olive oil. Mix all ingredients together and spoon into dish. Cover with silver foil

l Bake in oven, set to 175°C/350°F/gas mark 4 for 45 minutes

l Serve on a bed of steamed rice
