Cocktail of the week with Fabrizio Musorella

Amaretto Sour
The sour is a delicious combination of a spirit, lemon juice, caster sugar and bitters. The original was a Brandy Sour, a favourite in the 1850s. Bartender Jerry ‘Professor’ Thomas, America’s first star bartender, used egg white in a Whiskey Sour recipe in his 1878 bar manual. You can make sours with any spirits; the most requested is the Whiskey Sour. However, for your further drinking pleasure I chose the Amaretto Sour for its winning combination of the sweet almond flavor and the sourness of citrus.
Ingredients
5cl Amaretto liqueur
2cl fresh lemon juice
1tsp castor sugar
2tsp fresh egg white
dash Angostura bitter (optional)
Preparation
Pour all ingredients into a shaker with ice. Shake vigorously.
Pour directly into an old-fashioned glass and garnish with a maraschino cherry.
