Twice As Nice

Chocolate Cake with Prunes

200g dry prunes, pitted
1? cup hot water
1 tsp bicarbonate of soda
150g dark brown sugar
4 tbsp butter, softened, extra for greasing
2 eggs
150g self-raising flour
100g dark chocolate, broken into pieces

l Preheat the oven to 160°C/300°F/gas mark 2. Generously grease a 20cm ring tin. In a glass bowl place the prunes, hot water and bicarbonate of soda, cover and stand for 5 minutes.
l Place the butter, sugar and prune mixture in a food processor and whiz to mix. Add the eggs and the flour and mix well; add the chocolate and whiz to mix. Spoon mixture into the ring tin and bake for about 1 hour.
l Serve hot with chocolate sauce, runny fresh cream or ice cream.
