Chocolate Mousse

400g chocolate
3 egg yolks
200ml milk
65g icing sugar
500ml fresh cream

l Melt the chocolate in Bain Marie.
l Meanwhile, beat the egg yolks and icing sugar in a bowl until creamy. Warm the milk and pour into the egg mixture, beating vigorously to mix. Spoon in the melted chocolate and incorporate well.
l Leave to cool before folding in the slightly whipped fresh cream. Do it gently and in circular movement. Divide between bowls or one big one.
l Chill for at least 5-6 hours before serving.
