Spinach and sun-dried tomato pasta sauce

1 bunch fresh spinach, stems removed
? c up sun dried tomatoes
1 onion, chopped
4 cloves garlic, minced
1 to 2 tsp olive oil
Fresh mushrooms, sliced
Ground black pepper to taste
Kalamata olives, chopped
Pine nuts
Feta, crumbled

l Soak sun-dried tomatoes in hot water for 30 mins, drain. Slice into thin strips
l Cook the pasta according to packet instructions
l Saute onions and garlic in oil over medium heat for 2 to 3 minutes
l Add mushrooms and black pepper, saut? for another 2 to 3 minutes, until vegetables are tender
l Add tomatoes, olives and pine nuts, toss
l Add spinach, toss and heat through
l Toss with pasta, garnish with feta
