Individual Nests Made of Mash

2 boiled potatoes, skins on
1 egg yolk and 1 whole for brushing
1 tbsp corn flour
1 tbsp Parmesan cheese, grated
salt and pepper

l Preheat the oven to 220C. Peel away the potato skin and whiz in the food processor for a minute. Add the egg yolk, salt, pepper, 1 tablespoon of corn flour and grated Parmesan and mix well.

l Brush the bottom of a shallow oven tray with olive oil. Spoon potato mixture in a piping bag fitted with a star nozzle. Pipe a round of potato mash onto the tray and build up an outer wall of 3-4cm high to create the nest. Repeat procedure with remaining mixture.

l Brush with beaten egg and bake in hot oven until nests turn gold.

Remove from the oven. Using a palette knife transfer onto individual serving plates and fill with your choice of creamy meat or vegetable dish.
