Spicy fish

3kg fish
Sliced onion
Sliced lemon
400g chopped onions
50g chopped garlic
200g sweet pepper, chopped
50g hot green peppers
100g fresh coriander, chopped
300g chopped ripe tomatoes
75g tomato puree
2tsp salt
1tsp hot chilli (or according to taste)
200g vegetable oil
Pine nuts (or almonds)

l Fry onions until soft. Then add garlic, peppers (sweet and hot) and the coriander. Once they are soft add tomatoes, tomato puree, salt and chilli. Cook until thick
l Put fish with slices of lemon and onions around it on a baking tray and put in a pre-heated medium oven. Cook for 10 minutes, cover the fish with foil and cook for a further 20 minutes
l Put the sauce on the plate, place fish on top and garnish with pine nuts
