LA MAISON FLEURIE

Coq au vin
Serves 4
Half a chicken, cut into portions (about ½ kg)
1 medium onion, finely chopped
½ cup of olive oil
3 tbsp tomato paste
½ kg baby (stewing) onions
2 potatoes, cut into quarters
cloves
1 stick cinnamon
1 bay leaf
2 cloves of garlic
1 glass of white wine
Salt and pepper

l Fry the pieces of meat in olive oil, add the finely chopped onion and the garlic cloves. Pour in the wine, add the tomato paste, cloves, cinnamon, bay leaf, and add salt and pepper to taste. Allow to cook for 1/2 hour
l Add the baby onions. Cook for a further 1/2 hour and then add the potatoes. Cook for another 30 minutes.
