As summer is approaching, some of the most delicious, refreshing and fun cocktails to prepare are the blended cocktails that combine the texture of fresh fruit, the smoothness of ice-cream or fresh cream, with the essence of the base spirits. During your pool or veranda party it is always best to make more then one drink at one time. Wash, peel and possibly dice the fruit before adding it to the blender. Make sure that there is enough liquid in the blender or you might have to add a dash of white wine or spirit to make the mixture easier to blend. Use crushed ice to have a smoother drink and remember – rule number one: always add the ice last. Salute and don’t forget the sun block!

Ingredients
4cl apricot brandy
2cl triple sec
5cl fresh orange juice
2 tbsp vanilla ice cream
Preparation
Put the ice cream into the blender and add the remaining ingredients. Blend for few seconds. Add a scoop of crushed ice. Blend till smooth and pour into a goblet glass. Garnish with a slice of orange and a mint leave. Serve with straw.
