Cocktail of the week with Fabrizio Musorella

Paradise

If you prefer a particular gin in a cocktail, always use the same brand and it will taste the same each time. The best gin is recognised as that made from grain, preferably corn. Most gin is made in a continuous still to produce the 96 per cent of alcohol required. A second distillation involves the spirit being distilled along with natural botanicals to produce a subtle premium gin. Botanicals mostly include; angelica, lemon and orange peel, cassia bark, licorice, juniper berries (hence the name) and spices like cardamom and cinnamon. There are four main types of gin from the unsweetened Dry and London Dry to the slightly sweetened Old Tom and Plymouth. One popular recipe of the 1960s with a delectable essence of orange and apricot for you to try at home is the Paradise. Salute!!
