Fajitas
650g boneless chicken breast
2 garlic cloves
2 jalapeno peppers
½ cup olive oil
1tsp chili powder
2tsp ground cumin
40ml premium tequila

l Slice the chicken breast into long, 1/2inch wide strips.
l To make a marinade, drop the garlic cloves and the jalapeno peppers through the feed tube of a food processor with the chopping blade in place and the motor running until they are finely chopped. Add the remaining ingredients and process until smooth.
l Pour the marinade over the chicken and let it marinade for two hours at room temperature or overnight in the fridge, turning occasionally.
l Preheat an oven broiler. Drain the chicken, reserving the marinade. Arrange the chicken on the broiler tray and broil three inches away from the heat source for five minutes, turn, baste with marinade and broil for another five minutes.
l Serve with warmed tortillas, shredded lettuce, shredded cheese, chopped tomatos and salsa verde.
