Mozart

Ingredients
185gr chocolate
150gr butter
125gr sugar
125gr almond powder
70gr flour
4 eggs plus 2 yolks

l Melt chocolate and butter together
l Mix half the sugar with almond powder. Beat the egg whites until stiff, add the remaining sugar and continue beating for 20 seconds.

l Fold in the yolks, the almond powder, mix the flour and the egg whites into the chocolate butter mixture.

l Pour into a buttered and floured mould.

l Bake in a Bain-Marie for 20 – 30 minutes at 170C
