Chopsticks

Spicy Noodles
Serves 4

500g noodles
100ml cooking oil
50g bean sprouts
3 spring onions, cut in big pieces
1 sweet red pepper, cut into chunks
1 onion, cut into chunks
2 rashers bacon, chopped
2 tsp soy sauce
1 tsp chilli powder
1 tsp curry powder
1/2 tsp salt

l Bring a saucepan of water to the boil, add the noodles and boil until tender. Drain and rinse under cold water, then rinse in hot water and drain once again. Toss in 1 teaspoon of oil and leave to cool.
l Use half of the oil to stir-fry the peppers, onions, bacon and beansprouts for a few minutes. Heat the remaining oil and add the noodles. Stir gently until coated with oil. Add the vegetables and the rest of the ingredients and mix well. Serve immediately.

Chicken with Mango
Serves 4

400g chicken fillet, thinly sliced
2 mangos
40g different colour sweet peppers
1 tsp sugar
1 tsp soy sauce
salt and white pepper
1/2 cup chicken stock
1 tsp cornflour
cooking oil

l Cut mangos into chunks, carefully removing the stone
l Season the chicken with salt and pepper. Heat oil in a wok and stir fry chicken until lightly brown. Pour in the chicken stock and add the peppers, sugar and mango chunks. Stir for 5-10 minutes.
l Dissolve cornflour in water and stir into chicken mixture, cook for 1 minute and serve.
